Beef and Egg

-watched Steve add salt and SUGAR and green onions to his eggs before whisking it up with his hands and throwing it on the wok, half full of oil, tossed it around for a few seconds and then threw on the already-stir fried beef onto the mess, it was all done in less than a minute; was delicious.
-He is being evasive with revealing the technique behind the marinating of his beef, need to glean the ingrediants from him one at a time maybe, or show up early in the morning to surprise him and offer to help prep.
  • sugar, salt, soy sauce, cornstarch, (egg??), what else ??? I must use sirloin steak instead of flank, does he tenderize before marinating ?
